Thanksgiving dinner was delicious, bountiful, and today we are looking at leftovers. Here are some tips on what to do with leftovers.
First, you may donate food to Saint Lucy's homeless shelter. You can drop it off at the entrance, but call in advance so they know you are coming.
Now, here's a recipe for great sandwiches that you can serve up with a cup of hot soup as a side. This is especially excellent with ham.
1 Long French baguette, sliced lengthwise in half.
Whipped butter (spread on the baguette)
Sliced white meat turkey
Sliced ham
Sliced Provolone, or cheddar cheese
Preheat broiler for 20 minutes.
Spread butter on bottom side of baguette
Arrange slices of cheese, ham and turkey on baguette
Before placing the top of the baguette on the sandwich, spread small amount of cold butter (about half a teaspoon) on top of turkey.
Close the sandwich.
Place sandwich in boiler, until cheese is melted and bread is crispy, about 3 to 5 minutes.
Remove entire baguette, and slice diagonally. Should make 4 sandwiches. Serve hot.
You can decorate each sandwich with a cherry tomato on a toothpick. Also good with sliced pickles.
